Puran Poli and Aamti

And today I am here with a very delicious recipe for.

Puran Poli and Aamti  

 Puran Poli and Aamti are traditional Maharashtrian dishes that are often served together. Puran Poli is a sweet flatbread made with lentil filling, while Aamti is a tangy and spicy lentil curry that complements the sweetness of Puran Poli. Here's the recipe for both dishes:



Puran Poli Recipe:

Ingredients:

  • 1 cup chana dal (split bengal gram)
  • 1 cup jaggery (grated)
  • 1 cup all-purpose flour (maida)
  • 1/4 tsp turmeric powder
  • 1/4 tsp cardamom powder
  • 2 tbsp ghee
  • Water as required
  • Salt to taste

Instructions:

  1. Rinse chana dal in water and soak it for 3-4 hours.

  2. Drain the water and cook the dal in a pressure cooker with enough water until it becomes soft.

  3. Drain any excess water and let the dal cool.

  4. Mash the dal using a masher or food processor until it becomes a smooth paste.

  5. Add grated jaggery, turmeric powder, and cardamom powder to the dal paste. Mix well.

  6. In a separate bowl, mix all-purpose flour, ghee, and salt. Add enough water to make a soft dough.

  7. Divide the dough into small balls and roll them into small balls.

  8. Take a small ball of the dal-jaggery mixture and place it in the center of the rolled dough.

  9. Fold the edges of the dough over the dal mixture to cover it completely. Roll it gently into a flatbread.

  10. Heat a tawa (flat pan) on medium flame and place the Puran Poli on it.

  11. Cook until both sides are golden brown, applying ghee as needed.

  12. Serve hot with ghee on top.

Aamti Recipe:

Ingredients:

  • 1 cup toor dal (split pigeon peas)
  • 1 onion (finely chopped)
  • 1 tomato (finely chopped)
  • 1 tbsp grated coconut
  • 1 tsp ginger-garlic paste
  • 2-3 green chillies (slit)
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/4 tsp asafoetida
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 2-3 tbsp oil
  • Salt to taste
  • Coriander leaves for garnishing

Instructions:

  1. Rinse toor dal in water and soak it for 30 minutes.

  2. Drain the water and cook the dal in a pressure cooker with enough water until it becomes soft.

  3. In a separate pan, heat oil on medium flame.

  4. Add mustard seeds and cumin seeds. When they start spluttering, add asafoetida, ginger-garlic paste, green chilies, and chopped onions.

  5. Saute until the onions become translucent.

  6. chopped tomatoes and saute the to become soft.

  7. Add turmeric powder, red chilli powder, and grated coconut. Saute for a minute.

  8. Add the cooked dal to the pan along with salt and enough water to make a medium-thick curry.

  9. Bring the mixture to a boil and let it simmer for 10-15 minutes.

  10. Garnish with coriander leaves.

  11. Serve hot with Puran Poli.
