Tarbooz Kay Chilkay Ki Sabzi

Ingredients:
- 2 cups watermelon rind, peeled and diced
- 1 onion, finely chopped
- 2-3 green chilies, sliced
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala powder
- Salt to taste
- 2 tbsp vegetable oil
- 1/2 cup water
- Fresh coriander leaves for garnish
Instructions:
Heat a large pan over medium heat and add the vegetable oil. Once hot, add the cumin seeds and coriander seeds and sauté until fragrant.
Add the finely chopped onion and sliced green chilies to the pan and sauté until the onion turns translucent.
Add the diced watermelon rind, turmeric powder, red chili powder, garam masala powder, and salt to the pan. Mix well and sauté for 2-3 minutes.
Pour in 1/2 cup of water, cover the pan with a lid, and let it cook for 10-15 minutes, or until the watermelon rind is tender and cooked through. Stir occasionally to prevent sticking.
Once the watermelon rind is cooked, uncover the pan and cook on medium-high heat for another 5-7 minutes, or until any excess liquid has evaporated and the sabzi has thickened.
Garnish with fresh coriander leaves and serve hot with roti or rice.
