Fortune Dumplings

And today I am here with a very delicious recipe for fortune Dumplings


To make the cabbage chicken dumplings, you will need the following ingredients:

Green dough:

  • 130g spinach
  • 420g all-purpose flour
  • 1/4 tsp salt

White dough:

  • 420g all-purpose flour
  • 1/4 tsp salt
  • 190g water

Cabbage chicken filling:

  • 350g Chinese cabbage (one-quarter of a cabbage)
  • 1 tsp salt (for cabbage)
  • 4 green onions, chopped
  • 100g shiitake mushrooms, chopped
  • 1kg chicken leg with skin, 5 big legs
  • 1 tbsp ginger paste
  • 1/8 tsp five-spice powder
  • 1/4 tsp Sichuan peppercorn powder
  • 1/2 tsp white pepper powder
  • 2 tbsp regular soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp oyster sauce
  • 1/2 cup chicken broth

To prepare the dough:

  1. Wash and blanch the spinach in boiling water for 1-2 minutes. Drain and cool down, then blend the spinach in a blender until smooth.
  2. Mix the spinach juice, flour, and salt in a bowl until it forms a dough. the dough for a few minutes until it is smooth and elastic.
  3. Repeat the same steps for the white dough, mixing the flour, salt, and water until it forms a smooth and elastic dough.
  4. Cover both doughs with a damp towel and let them rest for 30 minutes.

To prepare the filling:

  1. Cut the cabbage into thin strips and mix with 1 tsp of salt. Let it sit for 15 minutes, then squeeze out any excess water.
  2. Mix the cabbage with chopped green onions and shiitake mushrooms in a bowl.
  3. Cut the chicken into small pieces and mix with ginger paste, five-spice powder, Sichuan peppercorn powder, white pepper powder, regular soy sauce, dark soy sauce, sesame oil, and oyster sauce in another bowl.
  4. Heat a pan over medium heat and add the chicken mixture. Cook for 5-7 minutes until the chicken is cooked through, then add the cabbage mixture and chicken broth. Cook for another 3-5 minutes until the vegetables are softened and the sauce has thickened.

To assemble the dumplings:

  1. Roll out the green dough and white dough separately into long strips about 1 cm thick.
  2. Cut each strip into small pieces about 1 cm wide.
  3. Take one piece of green dough and flatten it with your fingers or a rolling pin into a small circle. Place a spoonful of filling in the center.
  4. Take one piece of white dough and flatten it into a thin circle. Place it on top of the filling, then pinch the edges of the two doughs together to seal the dumpling.
  5. Repeat until all the dough and filling are used up.

To cook the dumplings:

  1. Bring a pot of water to a boil. Add the dumplings and cook for 5-7 minutes until they float to the surface and the dough is cooked through.
  2. Drain the dumplings and serve hot with soy sauce or other dipping sauce. Enjoy!
