Fortune Dumplings

And today I am here with a very delicious recipe for fortune Dumplings

To make the cabbage chicken dumplings, you will need the following ingredients:
Green dough:
- 130g spinach
- 420g all-purpose flour
- 1/4 tsp salt
White dough:
- 420g all-purpose flour
- 1/4 tsp salt
- 190g water
Cabbage chicken filling:
- 350g Chinese cabbage (one-quarter of a cabbage)
- 1 tsp salt (for cabbage)
- 4 green onions, chopped
- 100g shiitake mushrooms, chopped
- 1kg chicken leg with skin, 5 big legs
- 1 tbsp ginger paste
- 1/8 tsp five-spice powder
- 1/4 tsp Sichuan peppercorn powder
- 1/2 tsp white pepper powder
- 2 tbsp regular soy sauce
- 1 tbsp dark soy sauce
- 2 tbsp sesame oil
- 1 tbsp oyster sauce
- 1/2 cup chicken broth
To prepare the dough:
- Wash and blanch the spinach in boiling water for 1-2 minutes. Drain and cool down, then blend the spinach in a blender until smooth.
- Mix the spinach juice, flour, and salt in a bowl until it forms a dough. the dough for a few minutes until it is smooth and elastic.
- Repeat the same steps for the white dough, mixing the flour, salt, and water until it forms a smooth and elastic dough.
- Cover both doughs with a damp towel and let them rest for 30 minutes.
To prepare the filling:
- Cut the cabbage into thin strips and mix with 1 tsp of salt. Let it sit for 15 minutes, then squeeze out any excess water.
- Mix the cabbage with chopped green onions and shiitake mushrooms in a bowl.
- Cut the chicken into small pieces and mix with ginger paste, five-spice powder, Sichuan peppercorn powder, white pepper powder, regular soy sauce, dark soy sauce, sesame oil, and oyster sauce in another bowl.
- Heat a pan over medium heat and add the chicken mixture. Cook for 5-7 minutes until the chicken is cooked through, then add the cabbage mixture and chicken broth. Cook for another 3-5 minutes until the vegetables are softened and the sauce has thickened.
To assemble the dumplings:
- Roll out the green dough and white dough separately into long strips about 1 cm thick.
- Cut each strip into small pieces about 1 cm wide.
- Take one piece of green dough and flatten it with your fingers or a rolling pin into a small circle. Place a spoonful of filling in the center.
- Take one piece of white dough and flatten it into a thin circle. Place it on top of the filling, then pinch the edges of the two doughs together to seal the dumpling.
- Repeat until all the dough and filling are used up.
To cook the dumplings:
- Bring a pot of water to a boil. Add the dumplings and cook for 5-7 minutes until they float to the surface and the dough is cooked through.
- Drain the dumplings and serve hot with soy sauce or other dipping sauce. Enjoy!
