Zarda and Pulao are two different rice dishes. Zarda is a sweet rice dish that is traditionally made with yellow food coloring, saffron, and sugar, while Pulao is a savory rice dish that is made with spices and vegetables or meat. Here are the recipes for both dishes:

Zarda Recipe:

Ingredients:

  • 1 cup Basmati rice
  • 2 cups water
  • 1 cup sugar
  • 1/2 cup ghee (clarified butter)
  • 1/4 cup mixed dry fruits (cashews, raisins, almonds)
  • 1 tsp cardamom powder
  • A pinch of saffron strands (optional)
  • A few drops of yellow food coloring
  • Instructions:
  1. rice thoroughly and soak it in water for 30 minutes. Drain and keep aside.
  2. In a pan, heat ghee and add the mixed dry fruits. Fry until golden brown.
  3. In the same pan, add the drained rice and fry for a minute until it turns opaque.
  4. Add water to the pan and bring it to a boil. Reduce heat to low, cover and cook until the rice is done and all the water is absorbed.
  5. In a separate pan, dissolve the sugar in 1 cup of water and bring it to a boil. Reduce heat and let it simmer until the syrup thickens and reaches one-string consistency.
  6. Add the cardamom powder and saffron strands to the syrup and mix well. You can also add a few drops of yellow food coloring to enhance the color of the rice.
  7. Pour the syrup over the cooked rice and mix well. Cover and let it simmer on low heat for a few minutes.
  8. Add the fried dry fruits to the rice and mix well.
  9. Turn off the heat and let the rice rest for 10-15 minutes before serving.

Your Zarda is ready to be served. It can be enjoyed hot or cold and is often served as a dessert or a sweet side dish.
