Zarda and vegetables Pulao
Zarda and Pulao are two different rice dishes. Zarda is a sweet rice dish that is traditionally made with yellow food coloring, saffron, and sugar, while Pulao is a savory rice dish that is made with spices and vegetables or meat. Here are the recipes for both dishes:
Zarda Recipe:
Ingredients:
- 1 cup Basmati rice
- 2 cups water
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 1/4 cup mixed dry fruits (cashews, raisins, almonds)
- 1 tsp cardamom powder
- A pinch of saffron strands (optional)
- A few drops of yellow food coloring
- Instructions:
- rice thoroughly and soak it in water for 30 minutes. Drain and keep aside.
- In a pan, heat ghee and add the mixed dry fruits. Fry until golden brown.
- In the same pan, add the drained rice and fry for a minute until it turns opaque.
- Add water to the pan and bring it to a boil. Reduce heat to low, cover and cook until the rice is done and all the water is absorbed.
- In a separate pan, dissolve the sugar in 1 cup of water and bring it to a boil. Reduce heat and let it simmer until the syrup thickens and reaches one-string consistency.
- Add the cardamom powder and saffron strands to the syrup and mix well. You can also add a few drops of yellow food coloring to enhance the color of the rice.
- Pour the syrup over the cooked rice and mix well. Cover and let it simmer on low heat for a few minutes.
- Add the fried dry fruits to the rice and mix well.
- Turn off the heat and let the rice rest for 10-15 minutes before serving.
Your Zarda is ready to be served. It can be enjoyed hot or cold and is often served as a dessert or a sweet side dish.
Pulao Recipe:
Ingredients:
- 1 cup Basmati rice
- 2 cups water or vegetable broth
- 1 onion, chopped
- 1 tomato, chopped
- 1/2 cup mixed vegetables (peas, carrots, green beans)
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp garam masala powder
- Salt, to taste
- 2 tbsp oil or ghee (clarified butter)
Instructions:
- the rice thoroughly and soak it in water for 30 minutes. Drain and keep aside.
- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add chopped onion, ginger paste, and garlic paste to the pan and sauté until the onion turns translucent.
- Add chopped tomato and mixed vegetables to the pan and cook for a few minutes until the vegetables are tender.
- Add coriander powder, garam masala powder, and salt to the pan and mix well.
- Add the soaked rice to the pan and sauté for a minute.
- Add water or vegetable broth to the pan and bring it to a boil.
- Reduce heat to low, cover, and cook until the rice is done and all the water is absorbed.
- Once done, turn off the heat and let the rice rest for 5-10 minutes before serving.
Your Pulao is ready to be served. It can be enjoyed hot or cold and is often served as a main dish with a side of Raita or Yogurt.
