Chicken Mayo Chutney Paratha Roll
Ingredients:
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup lukewarm water
- 2 tbsp oil
- 1 cup cooked and shredded chicken
- 1/4 cup mayonnaise
- 2 tbsp green chutney
- Salt and black pepper to taste
- 1/2 onion, thinly sliced
- 1/2 cup chopped lettuce
- 1/4 cup chopped coriander leaves
Instructions:
In a mixing bowl, combine the all-purpose flour and salt. Gradually add the lukewarm water and knead the dough until it becomes soft and pliable. Add a little more water if necessary. Add 1 tbsp of oil and nead again. Cover the dough and set it aside for 30 minutes.
In a separate bowl, mix the cooked chicken, mayonnaise, green chutney, salt, and black pepper until well combined.
Divide the dough into small balls.
Roll each ball out into a circle, about 6 inches in diameter.
Heat a non-stick pan over medium heat. Add a rolled-out dough circle to the pan and cook it for 1-2 minutes on each side, until lightly browned. Brush each side with a little oil to prevent sticking.
Place the paratha on a plate and spoon a generous amount of the chicken mayo chutney mixture onto the center of the paratha. Top with sliced onions, chopped lettuce, and coriander leaves.
Roll up the paratha tightly to form a roll, tucking in the ends as you go. Repeat with the remaining dough and filling.
Serve the chicken mayo chutney paratha rolls warm with extra chutney or ketchup on the side.
